Green Chile Chicken Mac and Cheese

Delicious Chicken and Hearty Mac and Cheese with a kick!

Ingredients

  • 1 case
    Gold Kist® Fully Cooked Fajita Strip
  • 1 case
    Low fat whole grain macaroni and cheese
  • 2 cans
    Diced green chiles, mild
  • 2 bags
    Reduced fat shredded cheddar cheese (for garnish)
  • 1 batch
    Pico de Gallo (see recipe below)

Method

  1. Preheat oven to 350°F.

  2. Bake Gold Kist Fajita strips according to package instructions.

  3. Hold at 145°F until service.

  4. Make macaroni and cheese according to package instructions.

  5. Stir in green chiles to macaroni and cheese.

  6. Use #6 spoodle to serve macaroni and cheese.

  7. Add heaping #2 spoodle of chicken to the top of the macaroni and cheese.

  8. Garnish with 1 teaspoon of cheese and 1/4 cup of Pico de Gallo.

  9. Serve with a smile.
